How a mapping stretches or squeezes space around a point: the matrix of how each output changes with each input, whose determinant says how much an area grows or shrinks. On a sea of Gerstner waves it is 1 on still water and falls toward 0 where a crest pinches the surface together, which is where foam gathers.
